Fruit and Yogurt Salad

Ingredients

  • 2 cup plain or vanilla yogurt
  • 1/2 lbs strawberries - washed
  • 2 x bananas
  • 1 large apple
  • 1 small melon (cantaloupe)
  • 1/4 lbs white seedless grapes - washed
  • 3/4 cup powdered sugar (confectioners)
  • 2 x egg whites
  • 2 tbsp almond flakes (or pistachios)
  • 2 tbsp lemon juice
Directions
Step: 1

  1. Cut bananas into 1/2 inch slices.
  2. Peel the apple and cut roughly into large 1-inch cubes.
  3. Cut melon into 1 inch cubes.
  4. Put all fruits in a large bowl. Drizzle with the lemon juice, then toss and refrigerate for an hour. The lemon juice prevents discoloration.
  5. Beat eggwhites and sugar until snow peaks form.
  6. Fold in the yogurt, then pour on top of the fruits.
  7. Top with almond flakes. Refrigerate for 30 minutes before serving.
